Bakery Style Apple Muffins

These muffins are bursting with chunks of fresh apples and a sweet cinnamon sugar topping. Perfect for breakfast or a midday snack, and they're vegan too!

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsweetened almond milk
- 1/2 cup canola oil
- 1 tablespoon vanilla extract
- 2 cups diced peeled apples (about 2 medium-sized)
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon

Preheat the oven to 375°F. Grease a 12-cup muffin tin or line with baking cups.

In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together the almond milk, canola oil, and vanilla extract. Pour the wet ingredients into the dry mixture and stir until just combined (don't overmix).

Gently fold in the diced apples until they're evenly distributed throughout the batter.

In a small bowl, stir together the remaining 1/4 cup granulated sugar and cinnamon. Sprinkle this mixture on top of each muffin.

Bake for 20-25 minutes, until a toothpick inserted in the center of a muffin comes out clean.

Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
