- 2.6 lbs (3.6 cups) Baker's Special honey
- 1.4 gallons water
- 2 oz fresh ginger, chopped
- 2 oz long pepper
- 2 oz grains of paradise
- 0.05 oz cloves
- 0.8 cup ale yeast barm (or dry ale yeast)

In a large pot, gently heat the honey over medium-high heat, stirring continuously until it bubbles and produces a dark, enticing smoke.

Carefully incorporate the water into the caramelized honey, stirring diligently to minimize splattering.

Boil the mixture for about 30 minutes, stirring occasionally, allowing it to reduce to 1 gallon.

Remove from heat and let the mixture cool to room temperature.

Transfer the cooled concoction into a sanitized carboy or fermentation vessel.

Add the ale yeast and seal the vessel with an airlock. Allow primary fermentation for 2-3 weeks, keeping an eye on the progress.
