Venture down Rogues' Road Citriglyn, a unique mead that harmonizes the zesty brightness of grapefruit with the sweetness of wildflower honey and an intriguing blend of spices. - 3.5 lbs wildflower honey
- 1 large grapefruit
- 1 stick star anise
- 2 whole cardamom pods
- 1 pinch ginger (optional)
- 1 tsp Champagne yeast
- Water to balance

Sanitize the 1-gallon jug and all associated equipment thoroughly.
- 2.
Pour the wildflower honey into the sanitized jug.
- 3.
Wash the grapefruit well, then quarter it. Add all pieces, including zest and rind, into the jug.
- 4.
Mix in the star anise, cardamom pods, and optional ginger.
- 5.
Fill the jug with cold water, leaving about 3 inches of headspace.
- 6.
Cap the jug and shake vigorously to combine ingredients and dissolve the honey entirely.
- 7.
Remove the cap and introduce 1 tsp of Champagne yeast. Swirl gently to integrate the yeast.
- 8.
Securely attach the airlock to the jug.
- 9.
Store the jug in a cool, dark place at room temperature (70–80°F).
- 10.
After a few days, monitor and adjust the water level if needed as foam decreases.
- 11.
Allow the mead to ferment undisturbed for 2 months; do not rack or feed the yeast.
- 12.
When the mead clears naturally, it’s ready for bottling.
- 13.
Bottle without adding priming sugar, ensuring it remains still.
