Berry Oatmeal Muffin Cups

- 2 cups rolled oats
- 2 cups plant-based milk (like oat or soy)
- 1 cup mixed berries (fresh or frozen)
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 cup maple syrup
- 1/4 teaspoon salt

Preheat your oven to 350°F (175°C) and lightly grease a muffin tin or line it with paper liners.

In a large mixing bowl, combine rolled oats, plant-based milk, maple syrup, vanilla extract, cinnamon, and salt. Stir until well mixed.

Gently fold in the mixed berries, ensuring they’re evenly distributed throughout the oat mixture.

Spoon the mixture into the prepared muffin tin, filling each cup to just below the rim.

Bake in the preheated oven for 25-30 minutes, or until the tops are golden and firm to the touch.

Remove from the oven and allow to cool for a few minutes before gently scooping the oat cups out of the tin.

Serve warm or let them cool completely, then store in an airtight container in the fridge for up to a week.
