Pumpkin Seed Berry Bites
ingredients
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 cup pumpkin seed flour
- 1/2 cup sunflower butter
- 1/3 cup honey
- 1/4 cup shredded coconut
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract

In a food processor, blend the mixed berries until smooth.

In a large mixing bowl, combine the blended berries, pumpkin seed flour, sunflower butter, honey, shredded coconut, chia seeds, and vanilla extract. Mix until well combined and the mixture reaches a thick, sticky consistency.

Refrigerate the mixture for 30 minutes to firm up.

Once chilled, roll the mixture into bite-sized balls using your hands.

Place the protein bites on a baking sheet lined with parchment paper. Optional: Roll each bite in additional shredded coconut for added texture and flavor.
