Tangy and sweet, this parfait is packed with fiber, protein and only 10 grams of carbs.
ingredients
- 2 cups of plain non-fat greek yogurt
- 1/4 cup chia seeds
- 1/4 cup almonds, chopped
- 1/4 cup blueberries
- 1/4 cup raspberries
- 1/4 cup strawberries, sliced
- 2 tbsp pure maple syrup
steps
- 1.
In a small bowl, combine the chia seeds and yoghurt, mix well and keep it in the refrigerator overnight.

In the morning, take four mason jars and spoon out a tablespoon of chopped almonds in each.
- 3.
Add two tablespoons of the soaked chia seed yogurt mixture.
- 4.
Layer a few raspberries, blueberries and strawberries over the yogurt layer and sprinkle in another tablespoon of almonds.
- 5.
Spoon some more chia seed yogurt over the fruit layer and then a layer each of raspberries, blueberries and strawberries, and top with the remaining chopped almonds.
- 6.
Drizzle pure maple syrup lightly over each jar.
- 7.
Seal or cover the jars with lids and refrigerate.
