Tangy lemon blueberry bars with a cheesy twist, made with almond and coconut flour crust.
ingredients
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup butter, melted
- 1 cup blueberries
- 8 oz mozzarella, shredded
- Zest of 1 lemon
- Juice of 1 lemon
- 1/2 cup sweetener of choice

Preheat oven to 350°F.

Mix almond flour, coconut flour, and melted butter in a bowl. Press into bottom of a greased baking dish.

Sprinkle mozzarella on crust, then top with blueberries.
- 4.
In a bowl, mix lemon zest, lemon juice, and sweetener. Drizzle over blueberries.

Bake for 25-30 minutes until golden brown.

Cool, then cut into bars.
