Lemon Blueberry Vegan Protein Bars

- 1 1/2 cups rolled oats
- 1 cup vanilla vegan protein powder
- 1/2 cup almond flour
- 1/4 cup chia seeds
- 1/4 cup maple syrup
- 1/4 cup unsweetened applesauce
- 1 tbsp lemon zest
- 1/3 cup lemon juice
- 1/4 cup fresh or frozen blueberries

Preheat oven to 350°F (180°C) and line an 8x8 inch baking dish with parchment paper.

In a large mixing bowl, combine rolled oats, protein powder, almond flour, chia seeds, and lemon zest.

Add in maple syrup, applesauce, lemon juice, and mix well until the batter is sticky.

Fold in blueberries gently.
