Bulgarian Beef Casserole with Feta

This savory Bulgarian Casserole with Shredded Beef is a one-pan wonder. - 2 lbs. beef chuck roast, shredded
- 2 tbsp. olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 1 tsp. sweet paprika
- 1 tsp. dried oregano
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 can (14 oz.) diced tomatoes
- 3 large potatoes, thinly sliced
- 1/2 cup crumbled feta cheese

Preheat oven to 375°F.

In a large Dutch oven, heat olive oil over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.

Add garlic, paprika, oregano, salt, and pepper and cook for 1-2 minutes until fragrant.

Add shredded beef and diced tomatoes with their juices. Bring to a simmer and cook for 10-15 minutes.

Spread half the thinly sliced potatoes over the beef mixture. Season with a pinch of salt and pepper. Repeat with the remaining potatoes.

Remove the lid or foil and sprinkle the crumbled feta cheese over the top of the potatoes.

Return to the oven and bake, uncovered, for another 15-20 minutes until the feta is golden brown.
