Veggie-Filled Baked Pasta Casserole
ingredients
- 8 oz pasta (penne or fusilli works great)
- 1 can (15 oz) mixed vegetables, drained
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Optional: fresh parsley for garnish

Preheat your oven to 350°F (175°C).

Cook the pasta according to package instructions until al dente, then drain it well.

In a large bowl, combine the cooked pasta, canned mixed vegetables, diced tomatoes, olive oil, Italian seasoning, garlic powder, salt, and pepper.

Transfer the mixture into a greased 9x13 inch baking dish.

Sprinkle the shredded cheese evenly over the top of the pasta mixture.

Cover with aluminum foil and bake for 20 minutes.

Remove the foil and continue to bake for an additional 10 minutes, until the cheese is bubbly and golden.

Let cool for a few minutes, then garnish with fresh parsley if desired.
