- 2 cups gluten-free all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ teaspoons ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ cup vegan butter, softened
- 1 cup granulated sugar
- ½ cup coconut sugar
- 2 flax eggs (2 tablespoons ground flaxseed mixed with 5 tablespoons water)
- 1 teaspoon vanilla extract
- 1 cup unsweetened applesauce
- 2 cups peeled and diced apples (preferably Granny Smith)
- Caramel Glaze: - ½ cup vegan butter - 1 cup coconut sugar - ¼ cup unsweetened soy milk - 1 teaspoon vanilla extract

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together gluten-free flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a large mixing bowl, cream together vegan butter, granulated sugar, and coconut sugar until light and fluffy.

Stir in the flax eggs and vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with the applesauce. Mix until just combined.

Gently fold in the diced apples.

For the glaze, melt vegan butter in a saucepan over medium heat. Stir in coconut sugar and almond milk, cooking until the mixture comes to a boil.
