A savory and satisfying frittata packed with fresh vegetables, dairy-free and carb-free. Perfect for a healthy breakfast or brunch option.
ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 2 cups spinach
- 8 eggs
- 1/4 cup unsweetened almond milk
- Salt and pepper to taste

Preheat oven to 350°F.

In a skillet, sauté onion and bell pepper in olive oil until softened.

Add cherry tomatoes and spinach, cook until wilted.

In a bowl, whisk together eggs, almond milk, salt, and pepper.

Pour egg mixture over vegetables in skillet.

Cook on stovetop for 3-4 minutes until edges set.

Transfer skillet to oven and bake for 15-20 minutes until fully cooked.
