Cheesy Chicken and Bell Pepper Rice Bake
ingredients
- 4 medium green bell peppers, diced
- 1 cup cooked rice
- 1 lb ground chicken
- 1 cup shredded cheddar cheese
- 1 can (14 oz) stewed tomatoes
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon cumin
- Salt and pepper, to taste

Preheat the oven to 375°F (190°C). Line a baking dish with aluminum foil.

In a large skillet, cook the ground chicken, diced bell peppers, onion, and garlic over medium heat until the chicken is fully cooked and no longer pink.

Stir in the cooked rice, stewed tomatoes, oregano, cumin, salt, and pepper. Cook for an additional 2-3 minutes.

Fill the bottom of the baking dish with half of the chicken and rice mixture. Sprinkle half of the shredded cheese on top. Repeat with another layer of the remaining mixture and cheese.

Bake for 30 minutes, until the peppers are tender and the cheese is melted and bubbly. Enjoy!
