Cheesy Veggie Fiesta Casserole
ingredients
- 2 cups broccoli florets
- 1 cup black beans, cooked and drained
- 1 cup corn kernels
- 2 cups spinach leaves
- 6 large eggs
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste

Preheat the oven to 375°F (190°C). Lightly grease a casserole dish.

In a large pot, steam the broccoli florets until slightly tender. Drain any excess water and set aside.

In a bowl, beat the eggs and mix in the shredded cheese, garlic powder, paprika, salt, and pepper. Set aside.

Layer the steamed broccoli, black beans, corn, and spinach in the greased casserole dish.

Pour the egg and cheese mixture over the vegetables, evenly distributing it.

Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.
