Cherry Amaretto Biscotti Bliss

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup amaretto liqueur
- 1 teaspoon vanilla extract
- 1 cup frozen cherries, thawed and chopped
- 1/2 cup sliced almonds

Preheat your oven to 350°F and line a baking sheet with parchment paper.

In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, beat the eggs, then stir in the amaretto and vanilla extract.

Combine the wet and dry ingredients until just mixed.

Gently fold in the thawed and chopped cherries and sliced almonds.

Divide the dough into two equal logs on the prepared baking sheet, flattening them to about 1-inch thick.

Bake for 25 minutes or until golden brown.

Remove from the oven and allow to cool for 10 minutes.

Transfer the logs to a cutting board and slice diagonally into 1/2-inch thick pieces.

Lay the slices cut-side down on the baking sheet and return to the oven for another 15 minutes until crisp.
