Creamy Coastal Seafood and Avocado Salad
ingredients
- 8 oz cooked shrimp, peeled and deveined
- 8 oz cooked bay scallops
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh dill, chopped
- 2 ripe avocados, diced
- 1 lemon, zest and juice
- 3 tablespoons extra virgin olive oil
- 1/2 cup Greek yogurt
- Salt and pepper to taste
- Mixed greens, for serving

In a large bowl, combine the shrimp, bay scallops, cherry tomatoes, cucumber, red onion, cilantro, dill, and diced avocados.

In a separate small bowl, whisk together the lemon zest, lemon juice, olive oil, Greek yogurt, salt, and pepper.

Pour the creamy dressing over the seafood mixture and gently toss to coat.
- 4.
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- 5.
Serve the chilled creamy seafood and avocado salad on a bed of mixed greens, garnished with additional herbs if desired.
