Choco-Caramel Bliss

Satisfy your sweet tooth with these decadent chocolate eclairs filled with luscious caramel cream and topped with a glossy chocolate ganache. A delightful treat for any occasion!

- 1 cup all-purpose flour
- 1 cup water
- ½ cup unsalted butter
- 4 large eggs
- 1 cup heavy cream
- ½ cup dulce de leche
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
- Confectioners' sugar for dusting

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a medium saucepan, bring water and butter to a boil. Add flour and stir vigorously until the dough forms a ball. Remove from heat and let it cool for a couple of minutes.

Gradually add eggs, one at a time, beating well after each addition, until the dough becomes smooth and glossy. Transfer the dough to a piping bag fitted with a large round tip.

Pipe the dough into 4-inch long strips on the prepared baking sheet, leaving space between each eclair. Smooth any peaks with a wet finger.

Bake for 25-30 minutes or until the eclairs are puffed up and golden brown. Remove from the oven and let them cool completely on a wire rack.

In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Fold in the dulce de leche gently until fully combined. Transfer the cream to a piping bag fitted with a small round tip.

Cut a small slit on the bottom side of each eclair and pipe the caramel cream into the center of each one.

In a microwave-safe bowl, melt the chocolate chips and heavy cream together, stirring until smooth and glossy. Dip the top of each eclair into the chocolate ganache, allowing any excess to drip off.

Place the eclairs in the refrigerator for 10-15 minutes to set the ganache. Before serving, dust with confectioners' sugar for an elegant final touch.
