Start your day with this warm and comforting bowl of cinnamon-infused quinoa, topped with a sweet and tangy berry compote and crunchy toasted coconut flakes.

- 1 cup quinoa
- 2 cups water
- 1 cup mixed berries (strawberries, raspberries, etc.)
- 2 tbsp lemon juice
- 1 tbsp pure maple syrup
- 1/2 tsp ground cinnamon
- Pinch of salt
- 1/4 cup coconut flakes, toasted

Rinse the quinoa thoroughly and cook it in water according to package instructions.

In a saucepan, combine the mixed berries, lemon juice, maple syrup, cinnamon, and salt. Cook over medium heat for about 10 minutes until the berries break down and release their juices.
