- 4 large oranges
- 4 egg yolks
- 1 cup full-fat coconut cream
- 2 tablespoons fresh orange zest
- 2 tablespoons freshly squeezed orange juice
- 1 teaspoon vanilla extract
- 2 tablespoons powdered monk fruit sweetener (or preferred sugar-free sweetener)

Cut off the tops of the oranges, approximately 1/3 of the way down. Carefully scoop out the flesh, being cautious not to rupture the peel. Set aside the orange cups.

In a heatproof bowl, whisk together the egg yolks, coconut cream, orange zest, orange juice, vanilla extract, and powdered monk fruit sweetener.

Place the bowl over a pot of simmering water and continue whisking for approximately 10 minutes or until the mixture thickens into a custard-like consistency.

Remove from heat and let it cool for a few minutes. Then, pour the custard into the hollowed-out orange cups.
