ingredients
- 6 cups wild oats
- 9 cups water
- 2 large oranges, juiced and zested
- 2 large lemons, juiced and zested
- 9 cups granulated sugar
- Wine yeast
steps
- 1.
In a large pot, bring 9 cups of water to a boil.
- 2.
Once boiling, add 6 cups of wild oats and reduce the heat to a simmer for about 20 minutes, stirring occasionally.
- 3.
Remove from heat and let the mixture cool to room temperature.
- 4.
Once cooled, strain the liquid through a fine mesh sieve to remove the oat solids.
- 5.
In a large mixing bowl, add the strained oat liquid, the juice and zest of the oranges, the juice and zest of the lemons, and 9 cups of sugar. Stir until the sugar completely dissolves.
- 6.
Sprinkle in the wine yeast and stir gently to combine, allowing the mixture to aerate slightly.
- 7.
Transfer the mixture to a sanitized fermentation vessel, leaving some space at the top.
- 8.
Seal the vessel with an airlock and store in a cool, dark place for 1 to 2 weeks, or until fermentation is complete.
- 9.
After fermentation, bottle the mixture, leaving a little headspace, and refrigerate. Serve chilled.
