ingredients
- 1 pre-made 9-inch pie crust
- 2/3 cup cocoa powder
- 1 can (12 oz) evaporated milk
- 2/3 cup cornstarch
- 1/2 tsp salt
- 1 stick (1/2 cup) unsalted butter, melted
- 3 tbsp vanilla extract
- 2 1/2 cups granulated sugar
- 5 large egg yolks
- 5 large egg whites
- 1/4 tsp cream of tartar
steps
- 1.
Preheat your oven to 350°F (175°C).
- 2.
Bake the empty pie crust for 8-10 minutes until slightly golden. Remove from the oven and set aside to cool slightly.
- 3.
In a large mixing bowl, whisk together the cocoa powder, cornstarch, sugar, and salt until well combined.
- 4.
In a separate bowl, beat the egg yolks, then mix in the evaporated milk, melted butter, and vanilla extract.
- 5.
Gradually pour the wet mixture into the dry ingredients, whisking until smooth and lump-free.
- 6.
Pour the chocolate filling into the pre-baked pie crust. Bake for 25-30 minutes until the filling is set.
- 7.
While the filling bakes, prepare the meringue. In a clean bowl, beat the egg whites with cream of tartar until soft peaks form.
- 8.
Gradually add 1/2 cup of granulated sugar while continuing to beat until stiff peaks form and the mixture is glossy.
- 9.
Once the pie filling is baked and slightly cooled, spread the meringue over the top, sealing the edges.
- 10.
Bake for an additional 10-15 minutes or until the meringue is golden brown.
- 11.
Allow to cool at room temperature before serving. Enjoy chilled!
