Tender beef cooked in creamy coconut milk, stuffed in colorful bell peppers and baked to perfection. A flavorful and satisfying meal that's perfect for weeknight dinners or special occasions.
ingredients
- 1 lb ground beef
- 1 cup coconut milk
- 4 bell peppers (any color)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp curry powder
- Salt and pepper to taste
- 1 cup cooked rice
- 1/2 cup shredded cheese
- Fresh cilantro, for garnish

Preheat oven to 375°F.

In a skillet, cook ground beef until browned. Add onion, garlic, curry powder, salt, and pepper. Cook until onions are translucent.

Stir in coconut milk and cooked rice. Simmer for 5 minutes.

Cut tops off bell peppers and remove seeds. Stuff peppers with beef mixture.

Place stuffed peppers in a baking dish. Cover with foil and bake for 25 minutes.

Remove foil, sprinkle cheese on top, and bake for another 5 minutes until cheese is melted.

Garnish with fresh cilantro before serving.
