ingredients
- 8 chicken thighs, bone-in, skin-on
- 1 can coconut cream
- 2 tbsp red curry paste
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish

In a large skillet, heat olive oil over medium heat.

Season chicken thighs with salt and pepper, then sear until golden brown, about 5 minutes per side.
