Coconut PB Keto Cookies with Monk Fruit
ingredients
- 1/2 cup coconut flour
- 1/4 cup peanut butter powder
- 1/4 cup unsalted butter, softened
- 1/4 cup granulated monk fruit (or preferred keto-friendly sweetener)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsweetened almond milk
- 1/4 cup sugar-free chocolate chips (optional)

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the coconut flour, peanut butter powder, monk fruit, baking powder, and salt. Mix well.

Add the softened butter, eggs, vanilla extract, and almond milk to the dry ingredients. Stir until a thick batter forms.

If desired, fold in the sugar-free chocolate chips.

Scoop about 1.5 tablespoons of dough, roll it into a ball, and flatten it slightly onto the prepared baking sheet. Repeat until all the dough is used, leaving some space between each cookie.

Bake for 12-15 minutes or until the edges turn golden brown.
- 7.
Allow the cookies to cool on a wire rack before serving. They will firm up as they cool.
