Whole wheat pita pockets filled with vibrant veggies, creamy hummus, and nutrient-packed legumes for a delicious and satisfying meal.
ingredients
- 4 whole wheat pita pockets
- 1 cup diced bell peppers (assorted colors)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup cooked chickpeas
- 1/2 cup red onion, thinly sliced
- 1/2 cup shredded carrots
- 1/2 cup hummus
- 1/4 cup chopped parsley
steps
- 1.
Cut the tops off the pita pockets to open them up.
- 2.
Spread 2 tbsp of hummus inside each pocket.
- 3.
Fill each pocket with bell peppers, tomatoes, cucumber, chickpeas, red onion, carrots, and parsley.
