Fragrant Ginger Chicken Cabbage Soup

- 1 lb boneless, skinless chicken breasts, cubed
- 4 cups chicken broth
- 1 small head of cabbage, thinly sliced
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 carrots, thinly sliced
- 1 tablespoon tamari or coconut aminos (soy sauce substitute)
- 1 teaspoon olive oil
- Salt and pepper to taste
