- 3 large bell peppers (any color), chopped
- 1 lb ground beef or turkey
- 1 cup cooked rice (white or brown)
- 1 can (15 oz) diced tomatoes, with juices
- 1 can (8 oz) tomato sauce
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)

In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened.
