ingredients
- 1 lb carrots, peeled and chopped
- 1 onion, chopped
- 2-inch fresh ginger, peeled and grated
- 4 cups vegetable broth
- 1 can (13.5 oz) full-fat coconut milk
- 2 tbsp coconut oil
- 1 tsp sea salt
- Fresh cilantro, for garnish

In a large pot, heat the coconut oil over medium heat. Add the onions and sauté until translucent.

Add the carrots and ginger to the pot, stirring for a few minutes until fragrant.

Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes or until carrots are tender.

Using an immersion blender or regular blender, puree the soup until smooth.

Return the soup to low heat and stir in the coconut milk and sea salt. Heat through without boiling.
- 6.
Ladle into bowls, garnish with fresh cilantro, and serve warm.
