Creamy Cauliflower Pasta Bake

- 1 head of cauliflower, cut into florets
- 8 oz pasta (penne or any desired shape)
- 1 cup garlic soft cheese
- 1 cup grated cheddar cheese
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
