ingredients
- 1 can (13.5 oz) coconut milk
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 4 cups vegetable broth
- 1 cup diced carrots
- 1 cup diced potatoes
- Salt and pepper to taste
- Fresh cilantro, for garnish
