Tender upo squash in a rich, creamy coconut curry sauce.
ingredients
- 1 upo squash, peeled and cubed
- 1 can coconut milk
- 2 tbsp red curry paste
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp vegetable oil
- Salt and pepper to taste
