Creamy Coconut Lentil Stew

- 1 cup Dupuy lentils
- 1 onion, diced
- 2 potatoes, peeled and cubed
- 3 garlic cloves, minced
- 1 chilli, finely chopped
- 1 tbsp olive oil
- 1 tbsp tomato paste
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper

Preheat a large pot over medium heat, add the olive oil and sauté the diced onions until they turn translucent.

Add the minced garlic, cumin, smoked paprika, and chili flakes to the pot, stirring continuously until fragrant.

Add the tomato paste and continue stirring for a minute.

Stir in the Dupuy lentils, cubed potatoes, vegetable broth, coconut milk, and salt and pepper. Bring the pot to a boil.
