ingredients
- 1 ½ cups canned coconut milk
- ½ cup almond milk
- ¼ cup maple syrup
- 2 teaspoons agar-agar powder
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1 ½ cups mixed berries (fresh or frozen)
- 2 tablespoons sugar
- 1 tablespoon fresh lemon juice
- Fresh mint leaves (for garnish, optional)
steps
- 1.
In a saucepan, whisk together the coconut milk, almond milk, maple syrup, agar-agar powder, vanilla extract, and lemon zest. Bring the mixture to a gentle simmer over medium heat, stirring constantly for about 5 minutes until the agar-agar is completely dissolved.
- 2.
Remove the saucepan from heat and let the mixture cool slightly. Then, pour it into 4 individual ramekins or glasses. Refrigerate for at least 4 hours or until set.
- 3.
Meanwhile, prepare the berry compote by combining the mixed berries, sugar, and lemon juice in a small saucepan. Bring to a low boil over medium heat, then reduce the heat and let it simmer for about 10 minutes until the berries release their juices and soften slightly.
- 4.
Remove the panna cotta ramekins from the refrigerator and spoon the berry compote evenly over the top. Garnish with fresh mint leaves if desired.
- 5.
Serve chilled and enjoy the creamy and fruity goodness of this vegan panna cotta!
