Fragrant Herb-Infused Pasta Fagioli
"Pasta e Fagioli (Macaroni and beans) Ingredients 1. 1 can cannelloni beans with liquid in tact 2. 1 can tomato sauce. 3. Chopped fresh basil, parsley and oregano. (1/2 cup each or 1 teaspoon dry) 4. ½ onion chopped 5. 2 cloves of garlic chopped 6. 3 tablespoons olive oil 7. ½ pound of ditalini Saute onion and garlic in olive oil until transparent. Add the can of beans with the liquid, the tomato sauce and the herbs and simmer for 45 minutes. Boil ½ pound of ditalini al dente (read label on package) and then drain and add to the tomato/bean mixture. Add a little water if it seems dry and heat together for 5 to 10 minutes. Sprinkle with fresh chopped parsley and basil and grated cheese. "
