- 1/2 gallon 2% milk
- 1/8 cup white vinegar
- 1/4 teaspoon salt
- 1/2 teaspoon lemon juice
- 2 tablespoons cold water

In a large pot, heat the milk over medium-low heat until it reaches 90°F, stirring occasionally.

Dissolve the lemon juice in the cold water, then slowly pour into the heated milk. Stir gently for 5-10 seconds, then remove from heat.

Let the mixture sit undisturbed for 5 minutes until curds begin to form.

Using a slotted spoon, gently scoop the curds into a microwave-safe bowl, pressing lightly to remove excess whey.

Microwave the curds for 1 minute, then drain any additional whey that is released.

Microwave the curds for another 30 seconds in a separate microwave-safe bowl. Drain again.

Sprinkle the salt over the curds and gently knead until smooth and elastic, resembling pizza dough.

Roll the mozzarella into mini bite-size balls or shape into your desired form.

For pizza toppings, refrigerate for a few hours before grating or slicing.
