Creamy Garlic Parmesan Fettuccine with Shrimp

- 1 lb fettuccine pasta
- 1 ripe avocado, mashed
- 1 cup grated Parmesan cheese
- 1 head of garlic
- 1 lb shrimp, peeled and deveined
- 2 tbsp avocado oil
- 1 tsp pink Himalayan salt
- 1 tsp complete seasoning
- ½ tsp black pepper
- 1 tsp Italian seasoning
- 1 tsp dried oregano
- Fresh parsley, for garnish (optional)

In a skillet, heat 1 tbsp of avocado oil over medium heat. Add the whole head of garlic (unpeeled) and toast for about 10 minutes, turning occasionally, until soft and golden. Remove the garlic and let it cool.

Cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

In the same skillet, add another tbsp of avocado oil. Add the shrimp and season with pink Himalayan salt, complete seasoning, and black pepper. Cook until pink and opaque, about 3-4 minutes. Remove and set aside.

Squeeze the roasted garlic out of its skins into the skillet. Add the mashed avocado, Parmesan cheese, Italian seasoning, and oregano. Stir well. Adjust the creaminess with reserved pasta water as needed.

Toss in the cooked fettuccine, ensuring each strand is coated in the sauce. Fold in the shrimp gently.
