Creamy Spinach Chicken Rice

- 4 boneless, skinless chicken thighs
- 1 cup long-grain white rice
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- Salt and pepper, to taste
- 2 tablespoons olive oil

Set the Instapot to sauté mode and heat the olive oil. Brown the chicken thighs on both sides and set them aside.
