ingredients
- 4 boneless, skinless chicken breasts
- 1 cup frozen spinach, thawed and drained
- 1 cup cream cheese, softened
- 1/3 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1/4 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 tablespoon olive oil
- Fresh basil leaves, for garnish
steps
- 1.
Preheat your oven to 375°F (190°C).
- 2.
In a mixing bowl, combine the thawed and drained spinach, cream cheese, mozzarella, garlic, oregano, black pepper, and salt. Mix until well combined.
- 3.
Carefully butterfly each chicken breast, cutting horizontally almost all the way through. Open the chicken breasts like a book.
- 4.
Spread a generous amount of the spinach dip mixture onto one side of each chicken breast and fold it back together, securing with toothpicks if needed.
- 5.
Heat olive oil in an oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and cook for 3-4 minutes on each side until golden brown.
- 6.
Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- 7.
Remove from the oven and let the chicken rest for a few minutes before serving.
- 8.
Garnish with fresh basil leaves before serving.
