- 2 medium potatoes, peeled and cubed
- 2 tablespoons garlic, minced
- 1/4 cup vegetable oil
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup all-purpose flour (optional, for binding)
- 1 egg, beaten
steps
- 1.
Boil the cubed potatoes in salted water until fork-tender, about 15 minutes. Drain and mash them in a large bowl.
- 2.
While the potatoes cool, sauté the frozen mixed vegetables in a skillet over medium heat with 1 tablespoon of oil until heated through, about 5-7 minutes. Add the minced garlic and cook for another 2 minutes.
- 3.
Add the sautéed vegetables to the mashed potatoes, mixing well. Season with salt, pepper, and add the beaten egg and flour if using. Combine until fully incorporated.
- 4.
Divide the mixture into equal portions and shape them into patties, about 3 inches in diameter.
- 5.
In a large skillet, heat the remaining oil and butter over medium-high heat.
- 6.
Place the patties in the skillet, cooking for 4-5 minutes on each side or until golden brown and crispy.
- 7.
Drain on paper towels before serving. Enjoy warm!
