Crunchy Chicken and Veggie Stir-Fry

- 1 lb boneless chicken breast, sliced
- 1 cup broccoli florets
- 1 cup snow peas
- 1 medium carrot, julienned
- 1 bell pepper, thinly sliced
- 3 green onions, sliced
- 2 cloves garlic, minced
- 1-inch fresh ginger, grated
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste

In a small bowl, whisk together soy sauce, cornstarch, and ½ cup water. Set aside.

Heat vegetable oil in a wok or large skillet over medium-high heat.

Add chicken slices, season with salt and pepper, and cook until golden brown. Remove from the pan and set aside.

In the same pan, add garlic and ginger. Stir-fry for 1 minute until fragrant.
