Feast of the Fallen Boar

- 4 lbs wild boar shoulder, cut into large chunks
- 2 tablespoons olive oil
- 2 large onions, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 3 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 apples, cored and chopped
- 4 large carrots, chopped
- 2 cups wild mushrooms, chopped
- Salt and pepper to taste
- 1 tablespoon honey (optional)

Preheat the oven to 300°F (150°C).

In a large Dutch oven, heat the olive oil over medium heat.

Season the boar chunks with salt and pepper, then brown them on all sides.

Remove the boar and set aside; add onions and garlic to the pot, sauté until softened.

Return the boar to the pot, adding the beef broth, red wine, thyme, and rosemary.

Bring to a simmer, then cover and transfer to the oven. Cook for 3 hours.

Add the apples, carrots, and mushrooms to the pot, stirring gently.

Return to the oven and cook for an additional hour, until the boar is tender.
