Festive Fusion

- 1.5 lb monkfish fillets
- 1 lb turkey breast
- 1 cup cherries, pitted
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 tablespoon fresh thyme leaves
- Salt and black pepper to taste
- Cherry tomatoes and thyme sprigs, for garnish

In a small saucepan, combine the pitted cherries, balsamic vinegar, and honey. Cook over medium heat until the cherries soften and release their juices. Remove from heat and set aside.

Season the turkey breast with salt, pepper, and olive oil. Place it in a roasting pan and roast for about 25-30 minutes until cooked through. Once done, let it rest for a few minutes before slicing.

While the turkey is roasting, season the monkfish fillets with salt, pepper, and thyme leaves.

Heat olive oil in a large skillet over medium-high heat. Sear the monkfish fillets for about 2-3 minutes on each side, until golden brown.
