Festive Spiced Apple Braggot

- 1 gallon of water
- 2 lbs honey
- 2 lbs fresh apple cider
- 1 lb malted barley (pale malt)
- 1 lb fresh apples (chopped, preferably a blend of sweet and tart)
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1 packet of mead yeast (such as Lalvin D-47)
- 1/2 cup sugar (for priming)
- Optional: Whole cinnamon sticks & star anise for garnish

In a large pot, bring the water to a gentle boil.

Stir in the honey until dissolved, creating a honey-water mixture.

Add the malted barley, stirring constantly for 10 minutes, then remove from heat.

Allow the mixture to cool to about 70°F before adding the fresh apple cider and chopped apples.

Add the cinnamon, nutmeg, and allspice, mixing thoroughly.

Transfer the mixture to a sanitized fermentation vessel, leaving some headspace.

Hydrate the yeast as per the packet instructions, then add it to the mixture.

Seal the vessel with an airlock and allow it to ferment for 4-6 weeks at room temperature.

Once fermentation is complete, bottle the braggot with a sugar priming solution (dissolve sugar in 1 cup of water and boil).

Store bottles in a cool, dark place for another 2-3 weeks to carbonate.
