Fiery Sausage Inferno

ingredients
- 10 oz (280 g) dried Chinese egg noodles
- 2 tbsp vegetable oil
- 8 oz (225 g) spicy pork sausages, sliced
- 4 cloves garlic, minced
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1 cup snap peas, halved
- 2 green onions, sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp chili garlic sauce
- ¼ tsp black pepper
- Fresh cilantro, for garnish

Cook the noodles according to package instructions until al dente. Drain and set aside.

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the sliced sausages and cook until browned and cooked through. Remove from the skillet and set aside.

In the same skillet, add the remaining tablespoon of oil. Sauté the minced garlic until fragrant, about 1 minute.

Add the julienned bell peppers and snap peas. Stir fry for about 2-3 minutes until the vegetables are tender-crisp.

Push the vegetables to one side of the skillet and add the cooked noodles to the other side. Pour in the soy sauce, oyster sauce, and chili garlic sauce. Toss the noodles until well-coated in the sauce.

Mix the noodles with the vegetables and add the cooked sausages. Stir-fry for an additional minute to heat everything through.

Season with black pepper and garnish with sliced green onions and fresh cilantro.
