Finnish Forest Chicken

- 4 chicken thighs, bone-in and skin-on
- 8 ounces cremini mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup lingonberry jam
- 1/4 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, for garnish

Season the chicken thighs with salt and pepper.

Heat a large oven-safe skillet over medium heat and melt butter in it.

Place the chicken thighs, skin-side down, and cook until golden brown, about 5 minutes per side. Remove the chicken from the skillet and set aside.

In the same skillet, sauté the mushrooms, onions, and garlic until tender and golden.
