ingredients
- 4 chicken breasts (boneless, skinless)
- 8 ounces mushrooms, sliced
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
steps
- 1.
Heat the olive oil and butter in a large skillet over medium-high heat.
- 2.
Season the chicken breasts with salt, pepper, and dried thyme.
- 3.
Add the chicken to the skillet and cook until golden brown on both sides, then remove from the skillet and set aside.
- 4.
In the same skillet, add the onions and mushrooms. Sauté until caramelized and tender, about 5-7 minutes.
- 5.
Stir in the minced garlic and cook for an additional minute.
- 6.
Pour in the chicken broth and deglaze the skillet, scraping up any brown bits.
- 7.
Reduce heat to low, and slowly whisk in the heavy cream.
- 8.
Bring the sauce to a simmer and let it cook for 3-4 minutes until thickened.
- 9.
Return the chicken breasts to the skillet and coat them with the creamy mushroom onion sauce.
- 10.
Cook for another 5-7 minutes, or until the chicken is cooked through.
- 11.
Serve the chicken with plenty of sauce spooned over the top, and garnish with fresh thyme if desired.
