Smokey, creamy dip made with roasted eggplants, tahini, and garlic.
ingredients
- 2 eggplants
- 3 cloves of garlic
- 3 tbsp tahini
- 1/4 cup lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
- Pita bread or veggies for dipping
steps

Preheat oven to 400°F.

Roast eggplants until charred and soft.
- 3.
Scoop out flesh, blend with garlic, tahini, lemon juice.
- 4.
Add olive oil, salt, and pepper to taste.
- 5.
Garnish with chopped parsley.
- 6.
Serve with pita bread or veggies.
