Lavender & Chamomile Floral Mead

- 3 lbs wildflower honey
- 1 gallon filtered water
- 1/4 cup dried lavender flowers
- 1/4 cup dried chamomile flowers
- 1 vanilla bean, split
- 1/2 cup golden raisins
- 1/2 lemon, thinly sliced
- 1/2 packet Lalvin ICV D-47 yeast

- 1.
Sanitize all equipment that will come into contact with the mead.
- 2.
In a large pot, bring half a gallon of water to a boil, then remove from heat and stir in the honey until fully dissolved.
- 3.
Add the dried lavender, chamomile, and split vanilla bean to the pot, cover, and steep for 20 minutes.
- 4.
Using a funnel, pour the mixture, including the flowers and vanilla bean, into the sanitized 1-gallon carboy.
- 5.
Add the golden raisins and lemon slices into the carboy.
- 6.
Top off the carboy with cool filtered water, leaving a few inches of headspace.
- 7.
Once cooled to room temperature (below 90°F), add the Lalvin ICV D-47 yeast.
- 8.
Cap the carboy and gently shake for a minute or two to distribute the yeast.
- 9.
Attach the airlock and stopper, then place in a dark, room-temperature location.
- 10.
Ferment for 1-2 months, or until bubbling in the airlock slows significantly.
- 11.
Rack the mead into a clean carboy, leaving sediment behind, and let it age for another 1-2 months.
- 12.
Bottle the mead and allow it to age for at least 6 months before savoring.
