Lavender Floral Mead

- 3 lbs. wildflower honey
- 2 Tbsp. dried culinary lavender buds
- ½ tsp. rose petals (optional)
- 1 packet of 71 B yeast
- 1 gallon of water

In a large pot, combine the wildflower honey and 1 gallon of water over medium heat, stirring until dissolved.

Remove from heat, add the dried lavender buds and rose petals (if using), and steep for 15-20 minutes.

Allow the mixture to cool to room temperature, then transfer to a sanitized fermentation vessel.
- 4.
Sprinkle the packet of 71 B yeast over the cooled mixture, do not stir.

Seal with an airlock and place the vessel in a dark, cool area, maintaining a temperature of around 68-75°F (20-24°C).

Let the mead ferment for approximately 2-4 weeks, checking for bubbles in the airlock to indicate fermentation activity.

Once fermentation is complete, siphon the mead into bottles, leaving sediment behind.
- 8.
Seal the bottles and let them age for at least one month before enjoying for optimal flavor development.
