Fragrant Biryani Blossom

- 2 cups basmati rice
- 1 lb boneless chicken, cut into pieces
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, slit
- 1 cinnamon stick
- 4 green cardamom pods
- 4 cloves
- 1 bay leaf
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 tablespoon biryani masala
- 1/4 cup yogurt
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons ghee

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

Heat ghee in a large skillet over medium heat. Add onions, green chilies, ginger, and garlic. Sauté until onions turn golden brown.

Add cinnamon stick, cardamom pods, cloves, bay leaf, and cumin seeds. Stir for a minute until fragrant.

Add chicken pieces and cook until they start to brown. Add turmeric powder, red chili powder, and salt. Mix well.

In a separate pot, bring water to a boil. Add soaked and drained rice along with salt. Cook the rice until it's 70% done, then drain and set aside.

In the skillet, add biryani masala, yogurt, mint leaves, and cilantro to the chicken. Mix until well combined.

Layer the partially cooked rice over the chicken mixture in the skillet. Cover and cook on low heat for 10-15 minutes until the rice is fully cooked and flavors meld together.
